My cooking skills used to reach only to heating up a microwave meal. With my friend's encouragement, my 2009 New Year's resolution was to try at least one new receipe every week. I fell in love with cooking since, and find cooking the best way to quiet my mind and melt my stress. 20101015 Vegetable Curry with Yoghurt

Starchy potatoes are the key as they best absorb all the delicisou sauce.
INGREDIENTS
800g small starchy potatoes
4 tbsp oil
1 onion, cut into wedges
2 tbsp kerrie powder
1 courgette, sliced and halved
1 cauliflower, chopped
400g can chopped tomatoes
300g Greek yoghurt
METHOD
1. Heat the oil in a pan over high heat, and brown the onions. Stir in kerrie powder and cook for 1 minute. Add the vegetables and cook for another 5 minutes. Pour 300ml water and chopped tomates into the pan, and bring to the boil. Add the potatoes, put the lid on, and simmer for about 15 minutes. Season with salt and pepper.
2. Slowly stir the yoghurt into the curry and simmer for another 3 minutes, keep stirring.
What is kerrie powder? I am just asking if that is a special brand of curry that you particularly like. I often use my own spices to make my own curry & there are so many different 'genres' of curry. Is this more cumin like with tumeric?
ReplyDeleteHi there. Kerrie is a sort of mild curry you can find here in The Netherlands. It is a mixture of spices, including ginger, cardemom, coriander, clove, turmeric, cumin, and black pepper. I usually use it when I am too lazy to mix the spices myself. :-)
